Coffee Loaf Cake, this cake tasted delicious the day I baked it, but somehow it tasted even better the next day! This coffee cake was bursting with flavors coming from butter, cinnamon, and vanilla.

Moist Coffee Loaf Cake

I usually make my coffee cakes in a 9-inch round pan, but I wanted to add Hight and fill it with streusel for extra yumminess. I went ahead and sprinkled some of the streusels on the cake to make it look beautiful from the inside and out.

The amount of sugar I used was reasonable, the sweetness of this coffee loaf cake is very much balanced. I am thinking of adding orange or lemon zest to the batter next time I bake it, just to experiment.

Making A Coffee Cake

Back to the coffee loaf cake. I know that some prefer the streusel to be on the cake and not in the cake. For those who love streusel, you can add all the streusel on top of this coffee cake too. Pour the cake batter and sprinkle the streusel on top, but never press the streusel down or else it will sink in the middle of the cake.

Coffee Loaf Cake Recipe
 
Ingredients
  • For the streusel:
  • ½ cup rolled oats (uncooked)
  • 1 tablespoon raisins
  • ¼ teaspoon cinnamon powder
  • ¼ cup brown sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon butter chilled
  • For the cake:
  • 1 cup all-purpose flour
  • ½ cup evaporated milk
  • 3 tablespoon softened butter
  • 1 tablespoon oil
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • Pinch of salt
Instructions
  1. Making the streusel:
  2. In a bowl, add all the ingredients and mix well using your fingers. Keep about three tablespoons from the streusel to the aside, to sprinkle on top of the cake if you wish.
  3. Making the cake:
  4. Preheat oven to 350F/180C. Line a 9 x 5 x 3-inch baking pan with parchment paper.
  5. In a bowl, sift the flour, baking powder, baking soda, and salt. Keep aside.
  6. In a different bowl, add the sugar, butter, oil, and vanilla, beat well for at least three minutes.
  7. Add the egg to the previous mixture and beat until combined. Add the milk and beat for one minute.
  8. Add the dry ingredients to the wet and gently mix for few seconds.
  9. Pour half the batter into the baking loaf pan, spread the streusel evenly, pour the remaining cake batter on the streusel. Sprinkle what left from the streusel on top of the cake.
  10. Bake for 45 to 50 minutes or until a skewer inserted in the middle comes out clean.
  11. Cool for 6 minutes while in the pan, then place on a cooling rack to cool completely.
