Banana Rice Pudding
Ingredients
For the Rice Pudding:
- ¼ cup rice, washed and soaked for 15 minutes I used basmati parboiled
- ¼ cup sugar
- 1 ½ cup milk
- ¼ cup heavy cream
- ½ teaspoon vanilla
- water enough to cover the rice while cooking it
For the Caramelized Bananas:
- 2 mediium bananas sliced
- 1 ½ tablespoon unsalted butter
- 2 tablespoon brown sugar
Instructions
To Make the Rice Pudding:
- In a pan, add water (enough to cover the rice) and let it come to a boil. Add the rice and cook until rice is tender, around 20 – 25 minutes. Drain the rice and keep aside.
- In a different pan, add the milk and sugar, let it come to a simmer. Now add the rice and keep stirring on medium heat until the rice is creamy in texture.
- Add the vanilla, heavy cream, and cook for three minutes.
To Make the Caramelized Bananas:
- In a pan, add the butter and when it melts add the bananas. Sprinkle with the brown sugar and after 30 seconds flip the bananas.
- Cook on the other side for another 30 to 40 seconds or until caramelized.
- Remove and place on top of the rice pudding.
Notes
- Make sure to wash and soak the rice for at least 15 minutes before cooking. This will help the rice cook evenly and become tender.
- When cooking the rice, use enough water to cover it and let it come to a boil first. This will prevent the rice from clumping together and sticking to the pan.
- Stir the rice pudding constantly after adding the rice to the milk and sugar. This will help the rice absorb the creamy mixture and prevent it from sticking to the pan.
- After adding the vanilla and heavy cream, cook the rice pudding for an additional three minutes. This will allow the flavors to meld together and give the pudding a rich, creamy texture.
- When caramelizing the bananas, make sure the butter is fully melted before adding the banana slices. This will help the bananas cook evenly and prevent them from sticking to the pan.
