This rice recipe is not Mexican or Indian. It was served with a juicy steak in a restaurant I visited a long time ago. The fluffy rice goes well with any gravy or grilled meat.
Another dish I can think of that has similar characteristics is Mexican rice.

- Parboiled rice: parboiled rice is best for this dish, but you can also use long-grain Basmati rice.
- Spices: We won’t use much, such as black pepper and turmeric.
- Chicken bouillon: We are not using more spices for the rice because we will depend mostly on the chicken bouillon to give it a richer taste. Of course, you can replace it with vegetable bouillon.
- Butter and oil: I’m using butter and oil to give the rice a buttery flavor without burning the butter. You can also use ghee instead of both of these fats.
- Lime juice: Lime gives the rice a bright flavor and helps it become fluffy. If you don’t have lime, go for lemon.
How to Make Lime Rice
Before Cooking
Wash and rinse the rice until the water is almost clear. Soak the rice in lukewarm water for at least 20 minutes.

Prepare the Onions: In a pan, heat the oil and butter. Add the chopped onion and sauté until translucent.
Step 2
Add Liquid and Spices: Pour in the boiling water. Once it boils, add the soaked and drained rice, lime juice, salt, black pepper, turmeric powder, and chicken bouillon.
Step 3
Cook the Rice: Bring the mixture back to a boil, cover the pan tightly, and reduce the heat to the lowest setting. Cook for 17 minutes.
Step 4
Stir and Continue Cooking: Uncover the pan and gently fluff the rice to avoid breaking it. Turn off the heat.
Step 5
Final Rest: Let the rice sit for 10 minutes with the heat off. This allows the flavors to meld and the rice to become perfectly tender.

- Add the water and when it comes to a boil, add the rest of ingredients.
- When it comes to a boil again, cover the pan tightly and reduce heat to the lowest setting. Cook for 17 minutes.
- Uncover and gently fluff the rice using a fork or a spatula to avoid breaking it.
- Cover again and let it sit for 10 minutes while the heat is off.
- Serve with curries or grilled meat.
