I’m psyched! Chickpea Salad is my favorite salad recipe and I thought of introducing it to you. It is simple, easy, and healthy.

This is one of the salads that can almost substitute a meal, it’s full of nutrients and vitamins, plus the amazing flavor coming from different ingredients used. Usually, we have this salad with dishes that have rice or pasta.
Making A Healthy Chickpea Salad
But it can go well with steaks and baked chicken. Be creative an add more vegetables if you wish, although, in my opinion, this chickpea salad is almost perfect as is.
Pack some for your office and share it with your co-workers, or even snack on it instead if picking something less healthy like candy or chocolate.
If you love chickpea the way I do then you should try my Hummus Without Tahini recipe. The hummus recipe is faster than making this salad and makes a silky-smooth hummus which you can use as a dip or a spread in your sandwich.
Another vegetarian dish that you can serve chickpea salad with is Mushroom and Rice. The combination is heavenly, it’s like this salad is made especially for that dish.

Chickpea Salad Recipe and Simple Dressing
Ingredients
- 1 cup chickpeas
- 1 medium tomato chopped
- 1 medium cucumber chopped
- ⅓ cup black olives pitted
- 1 green onion chopped
- 1 medium carrot chopped
Dressing
- 3 tablespoon olive oil
- ¼ cup lemon juice
- 2 tablespoon balsamic vinegar
- Salt to taste
- ¼ teaspoon black pepper
Instructions
- Chop the vegetables.
- If you are using canned chickpeas, drain it and rinse it with water.
- Whisk the dressing ingredients together.
- Mix all ingredients together with the dressing and serve cold.
