Chicken: The first ingredient we’ll need is juicy chicken breasts. We’ll cook them thoroughly and then shred them so the chicken spreads through every bite. 

Dough: The secret to getting the best buffalo chicken bites is all in the dough you use! I highly recommend trying my super easy hot dog rolls dough for the tastiest chicken bites you’ve ever had!

Cheese: We will use two kinds of cheese in this recipe; cream cheese and cheddar cheese. Cheddar cheese will give us a sharp taste, while cream cheese is tangy and slightly sweet. 

Hot sauce: We need a good hot sauce for our buffalo chicken bites. Frank’s red hot sauce is one of the most popular, but you can use your favorite cayenne pepper sauce.

Seasoning: We’ll use light seasoning to polish off our chicken bites. Black pepper will give us a little earthy spice, and garlic salt will add a pungent, slightly sweet flavor.

🔪 HOW TO MAKE BUFFALO CHICKEN BITES

Making these delicious buffalo chicken bites is easier than you think! Here’s how to make them easily at home. 

The full instructions are in the recipe card below, but let’s look at the main steps to making this treat.

Step 1: 

Add all the filling ingredients to a medium bowl and mix them well. Then, dust your working surface with flour and cut the dough into two halves.

Step 2: 

Create an 11-inch long dough log, then dust it lightly with flour and roll it out to be 11″ x 6″. Fill the longest side with half the mixed filling.

Step 3: 

Roll the log up tightly, then pinch the seam of the dough with your index finger and thumb. Cut the log into the size you prefer, about 1 inch to 2 inches. Repeat steps 2 and 3 with the second half of the dough.

Step 4: 

Place the pieces on a baking sheet lined with parchment paper in a single layer and cover them with a towel. Let the pieces rest for 30 minutes, then brush them with a beaten egg and bake in a preheated oven at 180C/350F for 13 minutes.

Step 5: 

Allow the buffalo chicken bites to cool completely on a wire rack, then serve them with your favorite dipping sauce.

💭 EXPERT TIPS

Use hot sauce sparingly: Hot sauce is delicious, but only use what this recipe calls for. Adding too much hot sauce will make your dough soggy.

Let the mixture chill: After you mix together the filling ingredients, let it chill in the fridge for 30 minutes. This makes the mixture firmer and easier to roll in the dough. 

Taste test: Do a quick taste test of your filling mixture before rolling it in the dough. Adjust your seasonings as needed, as you can’t add any after it’s rolled.

Notes

  1. Do not add a lot of hot sauce to the filling or the dough will get soggy.
  2. Instead of eggs, you can brush the bites with cream or milk.
  3. You can be creative and add your favorite seasoning to the filling.
  4. Use any part of the chicken you prefer, you can also use leftover chicken for this recipe.
  5. You can go for blue cheese instead of cream cheese as some recipes call for, but we are not fond of it in my house.
