CHICKEN LO MEIN INGREDIENTS
Egg noodles: We'll need egg noodles to get the right flavor and texture. They're easily available in your local grocery store or Asian supermarket, but read the notes for substitution options.
Chicken: I've used boneless and skinless chicken breasts, but you can also use chicken thighs.
Veggies: This dish is packed with fresh, tasty veggies! We need cabbage, carrots, onion, green onions, and bell peppers.
Sauces: It's all about the sauce in this delicious recipe! We'll primarily use soy and oyster sauce for the perfect lo mein sauce!
HOW TO MAKE CHICKEN LO MEIN
This recipe makes it incredibly easy to make chicken lo mein at home. The full instructions are in the recipe card down below, but let's look at the main steps to make this dish:
Step 1:
Cook the noodles as per the package instructions. Drain and keep aside. (read note #2).
Step 2:
Add the chicken, cornstarch, white pepper, and soy sauce to a medium bowl. Mix well to coat all the chicken slices. In a large skillet or wok, heat oil at medium-high heat, and when hot, add the chicken and cook both sides until you see brown patches. Remove the chicken and keep it aside.
Step 3:
Add the garlic and ginger to the remaining oil and stir for a few seconds. Next, add the onion slices and carrots and stir for a minute. Add the bell pepper and the cabbage and stir for 30 seconds.
Step 4:
Now, add the chicken and stir for 30 seconds, then pour the sauce mixture and stir for a few seconds, add the hot water and stir for a minute.
Step 5:
Add the cooked noodles and mix well. Next, add in the spring onions and gently toss the lo mein. Turn off the heat and serve immediately.
💭 COOKING TIPS
- Instead of half a cup chicken broth, mix half chicken bouillon with ½ cup hot water.
- After draining the noodles, spray them with little oil and mix gently to prevent them from sticking together.
- I have used regular soy sauce but if you want to add dark soy sauce, add two tablespoons of regular soy sauce and one tablespoon of dark soy sauce when making the sauce.
- It is best to use egg noodles they taste great in this dish, but if you can’t get your hand on one, use thick spaghetti, it won’t give the same flavor, but you will still have a good-tasting lo mein.
- Do not use untoasted sesame oil. It won’t have much flavor. Always go for the toasted brown color sesame oil.
- Instead of chicken breast, go for thighs for juicier chicken.
📖 DELICIOUS VARIATIONS
Different protein: Instead of chicken, you can make beef lo mein by adding beef strips. Similarly, you can also try shrimp for a seafood lo mein.
Make it vegan: If you're vegan, substitute the chicken for some pan-fried tofu for a delicious vegan lo mein.
Other veggies: You can use just about any veggie you like! Some other great options are snow peas, mushrooms, broccoli, bean sprouts, and scallions.

Chicken Lo Mein
Ingredients
- 260 grams egg noodles
- 200 grams chicken breast cut into thin slices
- 1 medium carrot sliced
- 1 red bell pepper sliced
- 2 cup sliced cabbage
- 1 onion sliced
- 2 green onions cut in length 3 inch
- 3 garlic minced
- ½ teaspoon minced ginger
- 1 teaspoon cornstarch
- 3 teaspoon soy sauce
- ½ teaspoon white pepper powder
- 2 tablespoon oil
- 1 cup hot water
FOR THE SAUCE
- 3 tablespoon soy sauce
- 1 ½ tablespoon oyster sauce
- ½ teaspoon sesame oil
- ½ teaspoon sugar
- 2 tablespoon cornstarch
- ½ cup chicken stock read note #1
Instructions
FOR THE SAUCE
- In a small bowl, add all the sauce ingredients and mix well. Keep aside.
TO MAKE THE CHICKEN LO MEIN
- Cook the noodles as per the package. Drain and keep aside. (read note #2).
- In a different medium bowl, add the chicken, cornstarch, white pepper, and soy sauce. Mix well to coat all the chicken slices.
- In a large wok or pan, add the oil, and when hot, add the chicken and cook both sides until you see brown patches on medium heat. Remove the chicken and keep it aside.
- Add the garlic and ginger to the remaining oil and stir for a few seconds. Do not let the garlic get dark.
- Add the onion slices and carrot. Stir for a minute. Add the bell pepper and the cabbage and stir for 30 seconds on medium heat.
- Now, add the chicken and stir for 30 seconds, then pour the sauce mixture and stir for a few seconds, add the hot water and stir for a minute.
- Add the noodles and mix well. Add in the spring onions and gently toss the lo mein.
- Turn off the heat and serve immediately.
