Ingredients

  • 3 medium tomato chopped
  • 1 medium onion thinly sliced
  • 3 cucumbers peeled and sliced
  • ยฝ head of lettuce
  • ยฝ cup pitted black olives, cut in half
  • ยฝ cup feta cheese (I have used one mixed with mint)

Salad Dressing

  • ยผ cup lemon juice
  • โ…› teaspoon salt or to taste
  • โ…› teaspoon black pepper
  • 2 tablespoon olive oil (better to use light)

Instructions

  • In a bowl add the prepared vegetables and then add the feta cheese and mix.

To Make the Dressing

  • In a small bowl, mix all the dressing ingredients.
  • Add the dressing to the salad only at the time of serving, or the texture of the vegetables will change and turn soggy.

  • You can get creative with the vegetables and add your favorites.
  • I have used feta cheese with mint, but you can go for plain feta cheese.
  • Although the dressing tastes great with the salad, I prefer to have this salad without any dressing since the mixture of feta cheese and the olives almost substitute it.
