In a pot or a large pan, add ghee, and when it melts add chopped onions and cook them on medium heat until they turn translucent and are about to brown. Then add in the meat and stir for a minute.

Now add the ginger and garlic and chopped green chili and mix for a minute then add the potatoes to the pot. After mixing the potatoes with the meat for three minutes, add all the spices and salt. Mix well and reduce heat to medium-low to prevent the spices from burning.

Cover the pan for a minute and then mix again. To ensure not to burn the ingredients, you must keep mixing the mixture for at least five minutes or until the meat browns a little.
Step 4:
Next, pour the boiling water over the meat and let it boil. Stir the mixture occasionally to prevent the curry from burning and the more you mix, the more flavor your mutton curry will have.
Step 5:
The meat may take 45 to 50 minutes to cook depending on the size of the meat you have. When the meat is tender, and the sauce has reduced, the mutton curry is ready to be served!

Interesting. Where I live, we use the word “mutton” to describe meat from a two-to-three-year-old lamb. I don’t know if I’ve ever had goat meat. I wonder what it tastes like.
Hi Jeff, Some states in India use mutton for goat and lamb meat. I mainly go for lamb meat since it tastes better. When I lived in the United States, the Bengali shops referred to goat meat as mutton, but from my experience, it’s best to use lamb meat for Indian dishes. Goat meat takes longer to cook, so they use it in curries and lamb meat for dishes like Biryani.
