Mixed Nuts Cookies

Unlike other cookie recipes on the internet, you’ll find that my cookie recipes have less sugar. I assure you these cookies are tasty and the sweetness is balanced.

Making Mixed Nuts Cookies.

These Mixed Nuts Cookies are soft from the inside with a slight crunch from the outside. Melting the butter enhanced the flavor and added that chewy texture.

Although this is not a low-calorie cookie, it is still lower in calories than your average cookie, which is 140 to 125 calories, and it will not spike up your sugar level.

I’ve used cashew and almond but you can use your favorite mixed nuts.

Mixed Nuts Cookies

Ingredients

  • ½ cup melted butter
  • 6 tablespoons brown sugar unpacked
  • ¼ teaspoon baking soda
  • 1 ¼ cup all-purpose flour
  • 1 medium egg
  • ½ teaspoon vanilla
  • Pinch of salt
  • 3 tablespoons chopped nuts

Instructions

  • – Preheat oven 350F/180C.
  • – In a bowl, sift flour, salt, and baking soda. Keep aside
  • – In a different bowl, beat the sugar with butter, and vanilla.
  • – Add an egg to the previous mixture and beat until well combined. The mixture will get thicker.
  • – Add the flour and mix using spatula.
  • – Add the mix nuts and fold gently, this will prevent the cookies from getting tough.
  • – Refrigerate the dough for 20 minutes.
  • – Take 1 tablespoon from the dough, roll between your palms, and place in the baking pan. Press gently. Leave around 2 inches between cookies.
  • – Bake the cookies on the middle rack for 11 – 12 minutes.
  • – Let cool on cooling rack.

    1. Hi Mary, sorry the cookies didn’t come out right for you, but if you decided to give it a second try, bake the cookies for lesser time and if you like more nuts feel free to add a bit more to the dough. Let me know if this helped.

    Good cookies, not too much sugary. My nut mix included cashews, almonds, pecans and hazelnuts. I’ve also added a bit of chia seeds (they add a nice crunch to the mix) and black sesame seeds.

        Mine turned out pretty flat and greasy, the recipe looks amazing and smelt and tasted great, just wondered if anyone else had and encountered this problem and/or knows how to fix it? Thanks!

        1. Hi Oliver, Usually if the oven is not preheated for at least 20 minutes before using it the cookies come out greasy. As for the cookie being flat, next time you make these cookies try to press them down gently and not as much as you did this time. My first cookies came out flat becuase I pressed them down a little too much thinking they will rise while baking 😊. I hope this helped!

    My wife loved them so much that she requested I bake another batch. I bake them a little bit less like you suggested above and add some freshly ground cardamom seeds for aroma.
