Ingredients

  • ½ cup melted unsalted butter
  • 6 tablespoons brown sugar unpacked
  • ¼ teaspoon baking soda
  • 1 ¼ cup all-purpose flour
  • 1 medium egg
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 tablespoons chopped nuts, Almond and cashews tastes good together.

Instructions

  • Preheat the oven to 350F/180C.
  • In a bowl, sift flour, salt, and baking soda. Keep aside
  • In a different bowl, beat the sugar with butter, and vanilla.
  • Add the egg to the previous mixture and beat until well combined. The mixture will get thicker. Add the flour and mix using spatula.
  • Add the mix nuts and fold gently, this will prevent the cookies from getting tough. Refrigerate the dough for 20 minutes.
  • Take 1 tablespoon from the dough, roll between your palms, and place in the baking pan. Press gently. Leave around 2 inches between each ball.
  • Bake the cookies on the middle rack for 11 – 12 minutes. Let cool on cooling rack. If you want the cookies to be bigger, increase the baking time for a minute or two.

    Good cookies, not too much sugary. My nut mix included cashews, almonds, pecans and hazelnuts. I’ve also added a bit of chia seeds (they add a nice crunch to the mix) and black sesame seeds.

        Mine turned out pretty flat and greasy, the recipe looks amazing and smelt and tasted great, just wondered if anyone else had and encountered this problem and/or knows how to fix it? Thanks!

        1. Hi Oliver, Usually if the oven is not preheated for at least 20 minutes before using it the cookies come out greasy. As for the cookie being flat, next time you make these cookies try to press them down gently and not as much as you did this time. My first cookies came out flat becuase I pressed them down a little too much thinking they will rise while baking 😊. I hope this helped!
