🥘 INGREDIENTS YOU’LL NEED

7Up: This is definitely the star ingredient of the recipe. It’ll help leaven the cake along with baking powder and also make it lighter and fluffier than a classic pound cake while giving it a lemony flavor!

Lemon zest: To enhance the lemon flavor of the 7Up, we’ll also be adding some lemon zest to our pound cake. 

Flour: You need all-purpose flour to make this pound cake recipe. That’s right, this means you don’t need any cake flour or other fancy flour to make this delicious cake.

Eggs: We’ll also be adding three large eggs to the cake which will add moisture, and flavor, and help leaven the cake too. Plus, it’ll give the cake that classic yellow color that 7Up pound cake is known for!

🔪 HOW TO MAKE

The full instructions are in the recipe card below, but let’s look at the main steps to making this treat.

Step 1:

Start by preheating the oven to 170C/338F. Then in a stand mixer, beat the butter until it turns light in color, and then add sugar and beat for 7 minutes.

Next, add salt, flour, and baking powder to the butter-sugar mixture and mix it on medium speed. Add the lemon zest and mix it again for a few seconds. Add the eggs one at a time while mixing after each addition until it’s well combined.

Step 3:

Time for our 7Up! Add it in and mix until it’s well combined. A few seconds should be enough.

Step 4:

Grease and flour a Bundt pan and pour the batter into it. Lightly tap your bundt pan three times and let it bake in the oven for 30 minutes or until a skewer comes out clean.

Step 5:

Once it’s baked, let it cool on a wire rack then remove it from the pan. Mix the icing ingredients and pour over the cooled cake.

  • Always preheat the oven for at least 20 minutes before placing the cake in it.
  • Make sure that all the ingredients are at room temperature.
  • The butter should be soft and not melting. If you use melted butter, the texture will be different, and the cake will come out greasy.

  • Do not use other brands like Sprite or Mountain Dew. The cake will not taste the same.

Ingredients

THE CAKE

  • ¾ cup unsalted butter
  • 1 cup sugar Read note #1
  • 3 large eggs
  • ½ teaspoon salt
  • 1 ½ cup all-purpose flour
  • 1 teaspoon lemon zest
  • ½ teaspoon baking powder
  • ¼ cup + 1 tablespoon 7Up

  • ½ cup confectioner’s sugar
  • 2 ½ teaspoon milk

Instructions

  • Make sure that all the ingredients are at room temperature.
  • Preheat the oven to 170C/338F. The oven will take 30 minutes to reach the desired temperature.
  • In a stand mixer, using a whisk attachment, beat the butter until light in color, around three minutes.
  • Add the sugar and beat until fluffy for seven minutes. Don’t’ forget to scrape the edges.
  • To the butter and sugar mixture, add the salt, flour, baking powder, and mix on medium until combined a little less than a minute.
  • Add the lemon zest and mix for three seconds then add the eggs one at a time mixing after each addition until combined. Scrape the edges and mix for three seconds.
  • Now add the 7Up and mix until combined a few seconds is enough.
  • Grease and flour an 8” wide and 5” deep Bundt pan. Pour the batter in the Bundt pan and try your best to evenly spread the batter.
  • Gently tap the Bundt pan three times on the working surface and then place it in the middle shelf of the oven and bake for 30 minutes or until a skewer inserted in the cake comes out clean.
  • Place the Bundt pan on a wire rack for 3 minutes. To remove the cake from the pan, gently pull the sides of the cake toward the center.
  • Gently shake the cake to loosen it. Invert the Bundt pan onto the rack, remove the pan, and let the cake cool completely over the wire rack.
  • When the cake cools, mix the icing ingredients well and pour it over the cake. You don’t have to use all the icing on the cake, the cake will still taste great without the icing in case you were wondering if icing the cake is necessary. Please read note #1 in the notes below.

  1. If you don’t want to use the icing on the cake, then go for 1 cup sugar as mentioned in the recipe, use 1/2 to 3/4 cup sugar in the cake batter if you are going to use the icing. Some used 1/4 cup sugar in the batter and used all the icing and the cake came out perfect for them.
