I have tasted many yellow cakes made from yellow cake mix, and of course I tried my hands on few recipes available on the internet for homemade yellow cake recipes. The one I'm sharing here is the best I ever had!

To Make The Cake
1 1/4cupcake flour
3large egg yolks
1large whole egg
1 1/2teaspoonbaking powder
To Make The Icing:
1cupconfectioners’ sugar sifted.
Preheat oven to 350F/180C/Gas mark 4.
Sift flour with baking powder and salt. Keep aside.
In a different bowl, beat the eggs for 3 minutes, add the rest of ingredients, except the flour and milk. Mix well.
Add half the flour and mix gently. Add half the milk and mix gently, add remaining flour and mix, add the remaining milk and mix gently. Do not over mix or the cake will be tough.
Pour cake batter into a greased and floured a 9" x 5" loaf Pan. Bake
on medium rack, for 50 to 55 minutes or until the toothpick inserted in the middle of the cake comes out clean.
Add the vanilla to the confectioner’s sugar and mix, then add the milk one teaspoon at a time and mix until you get the creamy thick consistency.
