Ingredients
CHICKEN FAJITA MARINADE
4skinless and boneless chicken thighs
¼cuplime or lemon juice
2tablespoonolive oil
1teaspooncumin powder
1teaspoonpaprika
Salt to taste
½teaspoonblack pepper powder
Will need a little olive oil while grilling the chicken.
FOR THE VEGETABLES
½green bell pepper cut into strips
½orange bell pepper cut into strips
½red bell pepper cut into strips
1large onion cut into strips
3garlic minced
2tablespoonolive oil
¼teaspooncumin powder
¼teaspoonpaprika powder
¼teaspoonblack pepper powder
Salt to taste
Instructions
In a bowl, add the chicken thighs and the marinade ingredients. Mix well, cover and refrigerate for up to four hours. If you are short of time, marinate for one hour.
In a very hot cast iron skillet or a nonstick pan, add some olive oil and when hot add the chicken thighs. Cook both sides. Cover and keep aside. You can grill the chicken on a grill if you wish.
In a hot cast iron skillet or a nonstick pan, add the olive oil and all the vegetables, sauté for few seconds then add the garlic and the spices and sauté for few more seconds.
You can serve the chicken beside the vegetables or mix the chicken and the vegetables before serving.
Place the chicken fajitas over the tortillas and top with guacamole or your favorite topping.
