Meatloaf with a twist

I remember the first time I tried to bake a meatloaf, The house was full of smoke and when I took the meatloaf out of the oven, it was so hard, actually looked like a black brick. The recipe was fine but, you know when you just lay down to watch TV and the next thing you know, you’ve slept for an hour? Something like that happened to me that day.Ok, past is past, I’ve been making meatloaf for sometimes now, and have made different versions, some failed some became a hit. This version is liked a lot by the kids in the house. They say it tastes like a burger and meatballs combined.I make enough for my family since the meatloaf end up in sandwiches, feel free to double the ingredients. Hope you enjoy it 🙂
Ingredients:400gm minced beef
1 tablespoon olive oil
1 medium onion finely chopped
1/2 teaspoon thyme
1/2 teaspoon coriander powder
Salt
Black pepper
1 egg
2 tablespoon bread crumbs
1 garlic mined
1 medium size potato boiled and chopped (optional)For brushing the top:3 tablespoon ketchupmeat loaf 2

  • In a frying pan add the olive oil and onion, saute until the onion is soft.
  • In a bowl mix all the ingredients, including the fried onion, cover and keep in the fridge for 15 minutes.
  • Preheat oven to 350F/180C.
  • Pack the meat mixture into a loaf shape on an oiled oven tray.
  • Bake for 25 minutes, bring the loaf out of the oven and spread enough ketchup to cover the top.
  • Put the tray back in the oven and bake for another 15 minutes.
  • Takeout loaf from oven and cover with foil immediately, this will keep the loaf moist.
