I call them magical for many reasons, they are quick to make, quick to bake and once done, vanish. This is a basic muffin recipe with some modifications, you can sprinkle the top with chocolate chips, shredded coconuts, finally chopped cherry, or bake it plain. These muffins tastes even better the second day.
– 2 eggs
– 1 teaspoon vanilla
– 3/4 cup oil
– 3/4 cups sugar
– 3/4 cup milk
– 2 tablespoon yogurt
– 1 3/4 cup all purpose flour
– 1/4 teaspoon baking soda
– 1/2 teaspoon salt
– 2 1/2 teaspoons baking powder
– 1/2 cup chocolate chip (optional)
1- Mix flour with baking soda, baking powder and salt, Keep a side.
2- Beat rest of the ingredients in a bowl for 3 minutes.
3- Add flour mixture to the wet ingredients above, beat on low speed for 15 seconds.
4- Pour mixture in well greased or non-stick cupcake tray, add chocolate chip or shredded coconut on top (optional).
5- Bake for 12 minutes in a pre-heated oven at 350F/180C/ gas mark 4. Turn tray and bake for another 5 minutes.
