Lemon Walnut Cookies
Course: Cookies
Servings: 8
Ingredients
  • 1 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 100 gm butter
  • 6 1/2 tablespoon sugar
  • 1/2 teaspoon vanilla
  • 1 medium egg
  • 1 teaspoon lemon zest
  • 1/4 cup or 4 tablespoons crushed walnuts
Instructions
  1. Preheat oven 350F/180C.
  2. In a bowl, sift flour, salt, and baking powder. Keep aside
  3. In a different bowl, beat the sugar with butter, vanilla, and lemon zest.
  4. Add an egg to the previous mixture and beat until well combined.
  5. Gradually add the flour and mix using spatula.
  6. Add the walnuts and fold it gently to the dough, this will prevent the cookies from getting tough.
  7. Take 1 tablespoon from the dough, roll between your palms, press gently, and then place in the baking pan. Leave around 2 inches between cookies.
  8. Bake the cookies on the middle rack for 11 – 12 minutes.
  9. Let cool on cooling rack.
