Cajun Chicken Salad

Raw vegetables are great source of nutrients, so I keep creating new and different recipes of salads. Today I'm sharing something so simple, yet delicious and will fill you up for hours. It's My Cajun Chicken Salad!

side shot of Cajun Chicken Salad If you are on a weight loss journey or trying to eat healthy, salad should be your friend. It's best to save all the salad recipes you've tried and liked, so eating salad doesn't get boring after a while.

Cajun Chicken Salad in a plateSalad dressing is usually the culprit, it got way more calories than you can imagine, so in this recipe there is no salad dressing, but to add more kick to this salad try squeezing half a lemon on top.

Cajun Chicken Salad

Serves two. 290 calories per serving.

½ cup corn
3 cups shredded lettuce
2 tomatoes cut in cubes
1 cup chopped cucumber
2 teaspoon cooking oil
1 tablespoon olive oil
220gm skinless boneless chicken breast
1 chicken bouillon (low sodium)
¾ cup hot water
Salt
Black pepper
Cajun spice

- Season chicken with salt, black pepper, and Cajun spice.
- In a hot pan, add oil and when hot add the chicken and cook for 2 minutes on both sides. Remove from pan and cover tightly for three minutes (this will allow the chicken to cook from the inside and stay tender). Cut the chicken in cubes.
- In a small pan, add ¾ cup water and chicken bouillon, when it comes to a boil, add the chicken and let it cook for four minutes. Remove the chicken and discard what's left from the water.
- Cut the vegetables and add to the salad bowl. Season with salt and black pepper, add olive oil, add the chicken, and toss everything.
- Can be served cold.
