Almond Sugar Scones

almond scones-1
This recipe was featured in MunatyCooking Magazine April 2012 issue. These scones tastes richer and more delicious than the normal scones since evaporated milk is used. Just like normal scones it is done in no time.
One day I was out of milk and was craving scones so I grabbed an evaporated milk can and used it, I had to tweak the recipe a bit but the outcome was OH SO GOOD!
I served the scones with cream the first time, but with lemon curd it’s heavenly. I have the recipe for Lemon Curd in the same issue, the magazine is free and online so all you have to do is click here to get the lemon curd recipe along with many other mouth watering recipes and pictures.

Almond Sugar Scones Recipe:

1 medium egg
1 cup all purpose flour
1 tablespoon sugar
1 tablespoon baking powder
Pinch of salt
3 tablespoon chilled butter
2 tablespoon evaporated milk
1 teaspoon vanilla or orange zest

– In a bowl mix flour with baking powder, salt, and sugar, add butter and rub with flour using your finger tips, until you get a breadcrumbs like texture. Keep in fridge.
– In a different bowl beat the egg with rest of ingredients until well
combined.
– Pour the wet mixture in to the flour and stir just until the dough comes together. Over mixing will result in tough scones.
– Transfer the dough on to a floured working surface, knead 3 times, pat the dough into a circle about 1 1/2 inches thick. Cut this circle in four triangles.
– Place the scone in lightly greased baking pan. Bake for 15 minutes.
