Cold Pasta Salad with Mint

It’s boiling here! The temperature is high and as every summer my brain starts to sizzle if I to spend more than a minute out in the sun.
I was looking forward to taking some pictures since I got a new camera on my Birthday,YEAY! But can’t take pictures outside, instead I thought since it’s really hot and I needed to see how well the new camera captures colors, I decided to make something refreshing and colorful, Cold Pasta Salad with Mint.
You’ll get a combination of flavors that go together well, the sweetness comes from the onion, the tanginess from the lemon and olives, mild taste of pasta, and crunchiness of the cucumber.
This salad is amazingly good when it’s really really cold, You ask how cold? Well, the serving plate was in the fridge along with the other ingredients for this salad, including the dressing, as I said it should be served really cold.
Here what you’ll need to make this refreshing salad.
Ingredients for the dressing:
1 Tablespoon olive oil
Juice of one lemon
Pinch of salt
Black pepper
1 teaspoon dry mint
Ingredients for salad:
1 cucumber chopped
1 medium tomato chopped (deseeded)
1 small onion chopped
4 tablespoons chopped black olives
1 1/2 cup coked bowtie pasta

– Mix the dressing ingredients well and keep in the fridge.
– Mix the salad ingredients and keep in the fridge.
– Keep your serving plates in the fridge (believe me it makes a difference.)
– When about to serve, whisk the dressing and pour over the salad, give it a good toss and serve.
*Just a quick note, if you are planing to have this salad at work, omit the onion 🙂
