COFFEE APPLE CAKE

Here is a winner, you have your coffee, your fruit and a dessert all in one. I’m not sure if you can find this cake in the market, but might come across it in a hotel or a coffee shop, if the chef who gave me this recipe happened to work there.
The juice from the apple gives the upper layer a unique texture, while the pecans give it that nice crunch. Exceptional cake, especially for those who love coffee.
Ingredients:
- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs
- 1 cup flour
- 1/2 teaspoon vanilla
- 1 teaspoon baking powder
- Half an apple cut in small cubes
- 1/4 cup pecans (optional)
- 1/2 teaspoon cinnamon powder (optional)
- Pinch of salt
- 1 1/2 tablespoon instant coffee powder melted in 3-tablespoons of water.
- 1 1/2 tablespoon instant coffee powder melted in 3-tablespoons of water.
1- Beat butter with sugar until lighter in color and creamy in texture.
2- Add the egg with vanilla and keep on beating for 3 minutes.
3- Add the coffee and keep on beating still.
4- Mix flour with baking powder and salt and add it to previous mixture. Do not over beat, 15 seconds on very low speed are enough.
5- Pour the cake mixture in baking pan, add apple and pecans on top of the cake, sprinkle the cinnamon.
6- Place baking pan in preheated oven at 350F/180C/ gas mark 4 for 35 – 40 minutes.

I have made apple cake before but never mixed it with coffee. But, considering how much i love coffee, i am sure i would be thrilled with a slice of this cake…hehe.
