Saffron rice with beef

saffron riceKitchen to me is like an airport, which I use to travel to different countries’ cuisines. This time I take you with me to India, particularly to Hyderabad. It is a pleasant city with kind people who also happened to be very creative in cooking. Some of their dishes are easy and fast, others take long time to prepare. When it comes to cooking I’m patient, but I know that others may not be. So for the love of cooking I come up with ways to shorten the steps yet keep the great outcome. Did my best with this dish, and I hope you enjoy it.

Ingredients: Beef marinade

– 1/2 kilo beef
– Salt to taste
– 1 tablespoon ginger garlic paste
– 1/2 teaspoon red chili powder
– 1/2 teaspoon black pepper powder
– 1/4 turmeric powder
– 1 teaspoon garam masala
– 1 teaspoon coriander powder


Method: Beef marinade

1-
Mix all ingredients together and let it rest for at least 30 minutes.

 
Ingredients: For rice

– 2 chopped onions
– Salt to taste
– 1 stick cinnamon
– 3/4 cup yogurt
– 2 whole green chilies
– 5 whole cardamom
– Oil or ghee
– 1 1/2 cup rice
– 6 threads of saffron soaked in 1/4 cup warm milk
– 1 teaspoon lemon juice
– 1 teaspoon coriander powder
– 1 teaspoon cumin powder
– 1 tablespoon ginger garlic paste

Method:

1- In a hot pan, add oil and fry the marinated beef, until the water
evaporates.

2- Add three cups of water on beef and let it boil until beef is cooked.
Set aside.

3-
In a different pan add 3 tablespoons oil, add the cardamom, cinnamon stick
and onion, fry until the onions are light brown.

4- Add the beef and the green chilies, ginger garlic paste, all the
    spices, and yogurt.

5-When the oil starts to come on the surface, add 3 cups of hot water. When
it starts to boil add salt and rice. When it boils again add the saffron and
milk mixture and the lemon juice.
